Recipe: Exceptional grilled cheese
This sandwich goes great with Progresso’s Hearty Tomato Soup. It’s the perfect warm comfort food for a cold fall evening. Enjoy! Ingredients: Two thick slices of your favorite bread (I recommend whole grain white bread) Butter spread (Fleichman’s makes a great olive oil spread) Two slices mild cheddar cheese ¼ cup shredded mozzarella cheese Heat a skillet on the stove to medium (no higher). Spread butter over the entire surface of the first slice of bread. Place the slice butter side down in the skillet. Top with one slice of cheddar, then place the shredded mozzarella on the other slice. Spread butter over the entire surface of the second slice of bread and place the butter side up on the sandwich. Recipe: Barbecue dirty rice
A twist on a New Orleans classic with only four ingredients, this can be done quickly and easily in just one pot. 1 -1 ½ pounds Italian sausage 2 cups Minute Brown Rice (regular brown rice if you’ve got about 45 minutes for it to cook) 1 ½ cups shredded pepper jack cheese 1 13 oz can barbecue baked beans Brown the sausage in the pot, drain, and set aside. Cook the rice according to the package instructions. When the rice has absorbed all the water, stir in the meat, cheese and baked beans. Do not rinse the beans; the liquid adds a lot of flavor. Bisquick is my favorite shortcut to delicious muffins. With fall just around the corner, crisp, fresh apples are available everywhere. Ingredients: 2 cups flour 2 tablespoons sugar 1 egg 2/3 cup water or milk 2 apples, peeled, cored and chopped Smucker’s Caramel Sauce Paper baking cups (optional) Mix flour and sugar, add the egg, milk and apples and stir until just combined. Recipe: Stuffed Jalapenos
Ingredients: 12 large jalapenos 8 oz cream cheese 1 habanero Cumin 1 bunch cilantro 1 clove garlic ½ c onion Split the jalapenos lengthwise, leaving the stems attached but split. Clean out all seeds and innards. Mince onion, garlic and habanero. Melt cream cheese just enough to make mixing in the above easy. Fill the jalapeno halves to heaping with the cream cheese mixture. Recipe: Italian summer salad
So, it’s still hot outside. Looking for something light but still filling with lots of textures and flavors? Toss this together tonight for a bright, hearty, tasty meal: Salad Ingredients: Dole Spring Lettuce Mix (or your favorite bag of salad) 1 pint cherry tomatoes, halved 8 oz cubed summer sausage or ham (optional) ½ cup sliced almonds 1 cup shredded mozzarella cheese Dressing: Juice of ½ lemon (2-3 tablespoons) 6 tablespoons olive oil Italian spices (basil, garlic, oregano, etc.) Salt and pepper to taste Layer salad ingredients in a large bowl. Whisk dressing ingredients together in a small bowl. Pour dressing over salad and toss just before serving. For dessert, have a scoop of your favorite ice cream or sorbet.
