Ingredients: 1 head of green cabbage 1 yellow bell pepper 1 red bell pepper 4 potatoes 4 cups of chicken stock 3 Wyler’s bouillon cubes A pinch of sea salt Directions: Fill up a large pot (the larger the better) with four cups of chicken broth and water until the pot is half full of liquid. Cook on high heat. Sprinkle a pinch of sea salt and three Wyler’s chicken bouillon cubes into the pot. As the liquid is heating, chop up the potatoes, peppers and cabbage and place them in a bowl. Dump the bowl of vegetables into the pot. Cover the pot with a lid and turn the heat down to medium. Let cook for one hour, then enjoy. This one pot dish can be made in fewer than 20 minutes with minimal cleanup, and costs about $8. Adjust the parmesan to your taste. This serves four. You can also double the recipe; it makes good leftovers. If you’re looking to enjoy the best of what the season has to offer food-wise, start with apples. Apple-picking is one of my favorite fall activities, and Alldredge Orchard, located in Platte City, is worth the drive. There you’ll find a beautiful farm with an apple orchard, pumpkin patch and plenty of good food. If you have kids (or can borrow some for an afternoon), this is a great place for them to run free and have fun. They can explore the farm, watch the animals, play in the mini playhouse and have their own tricycle derby around the go-cart track.
